This is one of those recipes that are super easy, even though it seems to have a ton of ingredients. It’s also so delicious that even if it weren’t easy, it would still be worth the effort to make. I made this dip for a Memorial Day get together with my neighbors this year, and it was gone within 1 hour, and there were only 6 of us eating it! It’s that good!
Ingredients:
- 2 cups shredded Cheddar cheese
- 1 cup shredded Monterey Jack
- 2 tablespoons chipotle peppers in adobo sauce, diced small
- 1 small can (4 oz) diced green chilies, not drained
- ½ cup Mayo
- ¼ teaspoon garlic powder
- 1 11 oz can of corn, drained
- 1 small tomato
- 2 tablespoons cilantro, chopped
- 1/3 of an orange bell pepper
Directions:
- Preheat oven to 350 degrees
- Mix cheeses, chipotle peppers, diced green chili peppers, mayo, garlic powder, and corn, and pour into an oven safe dish
- Bake 20 minutes, or until golden brown and bubbly
- Top with diced tomatoes, orange bell pepper, and cilantro
- Serve immediately with Frito Scoops
