Hot Corn Dip

This is one of those recipes that are super easy, even though it seems to have a ton of ingredients.  It’s also so delicious that even if it weren’t easy, it would still be worth the effort to make.  I made this dip for a Memorial Day get together with my neighbors this year, and it was gone within 1 hour, and there were only 6 of us eating it!  It’s that good!

Ingredients:

  • 2 cups shredded Cheddar cheese
  • 1 cup shredded Monterey Jack
  • 2 tablespoons chipotle peppers in adobo sauce, diced small
  • 1 small can (4 oz) diced green chilies, not drained
  • ½ cup Mayo
  • ¼ teaspoon garlic powder
  • 1 11 oz can of corn, drained
  • 1 small tomato
  • 2 tablespoons cilantro, chopped
  • 1/3 of an orange bell pepper

Directions:

  1. Preheat oven to 350 degrees
  2. Mix cheeses, chipotle peppers, diced green chili peppers, mayo, garlic powder, and corn, and pour into an oven safe dish
  3. Bake 20 minutes, or until golden brown and bubbly
  4. Top with diced tomatoes, orange bell pepper, and cilantro
  5. Serve immediately with Frito Scoops
